First, let’s take a photo of the ingredients. You can put whatever ingredients you like.

Wash the sea bass as shown in the picture, open the belly and remove the bones.

Wash the shrimps, remove their heads and devein them

Fish and shrimp are marinated in peanut oil, salt and cooking wine

Wash the remaining ingredients and cut into pieces

Except for the green chili, chilli padi, and garlic, the rest of the ingredients are spread on the baking sheet

Heat the wok, pour in an appropriate amount of corn oil (you must use blended oil or corn oil for frying)

Let's fry the garlic first until golden brown, take it out and spread it on the baking sheet

Turn the fish and shrimp into golden brown respectively. This time I fried them without coating them in flour, and the taste is okay. If you like, you can coat them in some egg liquid, then coat them in some starch before frying them, which will make them more fragrant

Spread on the side dishes (the oil for frying the fish is in the original wok, don't pour it out yet, you will need to fry the peppers later)

While frying fish, take another pot and add blended oil

Pour in the chili sauce and stir-fry until fragrant

Add the pork ribs soup, bring to a boil over high heat (I just made the pork ribs soup today, if not, you can add water), and test the taste.

Pour the soup from the previous step into the baking pan

Heat the oil in the wok again, (remember to remove all the debris from the oil), add green chili peppers and chili padi, add dried chili peppers and Sichuan peppercorns after a minute, wait for about 10 seconds, remove them, don't fry them too much

Spread on the fish

Pour hot oil on the surface and arrange onion slices and coriander

Place the roasting pan on the induction cooker, heat it up, and cook while eating.
