【Shanghai】Babao Hot Sauce
Overview
Babao chili sauce is delicious and goes well with rice. Especially in winter, from time to time, I will stir-fry a pot of Babao chili sauce with meat and vegetables. The ingredients in it can be changed according to your own preferences. If you are more particular, add some shrimps and cashews on top to make it a great banquet dish. Try it if you like.

Mix the shrimps with cooking wine and cornstarch and let it sit for half an hour. Add the cooking wine to the diced pork and chicken, mix the cornstarch and light soy sauce and let it rest for half an hour

After the water in the pot boils, add the diced potatoes, diced mushrooms and dried tofu and blanch them

Pour cold oil into a cold pan and fry the cashews until they turn yellow and take them out
