Fresh and fragrant dry pot rabbit
Overview
On a hot day, I can't bear to cook the same dishes in the kitchen, so my favorite thing to cook is the dry pot type. All kinds of dishes are put together, with all kinds of meat and vegetables, and one pot is enough. The biggest advantage of making dry pot dishes is that you can put in any existing dishes at home regardless of the ingredients. Then, you can use the remaining seasonings and oil for the next meal.

Prepare dried chili knots and peppercorns.

Cut open the green and red peppers, remove the seeds, wash them and cut them diagonally into small pieces; cut the onions into small pieces, wash and cut the celery into inch-long sections.

Remove the old leaves from the green garlic seedlings, wash and cut into inch-long sections.

After washing the rabbit meat, put it into the pot, add water, cooking wine, ginger slices, and dried orange peel and cook until it is half cooked.

Heat rapeseed oil in a pot until it is 70% hot.

Add Pixian watercress, peppercorns, ginger rice, garlic rice, and soaked ginger slices and stir-fry until fragrant.

Add pickled pepper knots and dried chili pepper knots and stir-fry until fragrant.

Add rabbit meat and stir-fry evenly.

Stir-fry until the skin of the rabbit meat becomes watery, then add a little white wine to remove the fishy smell.

Add a little salt and continue to stir-fry evenly. (The salt is added here first to make the rabbit meat taste better)

Add green pepper and red pepper and stir-fry briefly.

Add onion pieces and celery segments and continue to stir-fry evenly.

Add appropriate amount of light soy sauce to taste and stir well.

Add chicken essence to enhance the freshness and some MSG to enhance the flavor.
