Overview

After making brine for pig's feet, the remaining brine is used to brine eggs and cabbage. In order to explain clearly how to make brine, let's treat it as making brine juice again and give the recipe.

  1. Measure the seasonings, 2 star anise, 1 tsp pepper, 1/2 tsp cumin, 4 bay leaves, 1/2 grass fruit, 2 pieces cinnamon, 1/2 tsp star anise seeds, 3 pieces tangerine peel, 2 pieces licorice;

  2. Use a steel wire tea box to store the granular seasonings to prevent them from floating in the pot when cooked;

  3. Prepare 5-6 slices of ginger and 8 green onions;

Open a pot, fill 2/3 of the pot with water, add 8 green onions, 5 slices of ginger, 2 star anise, 1 tsp of pepper, 1/2 tsp of cumin, 4 bay leaves, 1/2 grass fruit, 2 pieces of cinnamon, 1/2 tsp of star anise seeds, 3 pieces of tangerine peel, 2 slices of licorice, 2 tbsp of brown sugar, bring to a boil;

  5. Meanwhile, cook the eggs in another pot;

  6. Take out the scallions and ginger slices cooked in the brine pot, peel off the shells of the cooked eggs, put them into the brine pot, simmer for about 30 minutes, turn off the heat, and let the eggs soak in the brine until they turn color.
