Dengying Sichuan sesame twice-cooked pork
As a nation that traditionally eats pigs (most Chinese people), we have a deep connection with pork. Among them, pork belly can be said to be both loved and hated by modern people. What they love is the squeaking oily aroma, and what they hate comes from the squeaking oily aroma. Although there are still several months until summer, I will save some weight for my friends in advance and welcome the summer of 2016 together as Li Xiang and Zhang Huimei. For 3 consecutive issues, I will select 3 simple but inspiring dishes from the 8 major cuisines. Dingying is originally paired with beef in Sichuan cuisine. It is used to describe the chef's skill in cutting the braised beef. The tendons of the beef tendon are so thin that they are transparent. I use Sichuan-style twice-cooked pork here because I have seen that most home-cooked twice-cooked pork does not have the flavor of a restaurant. The reason is the thickness of the pork belly. I believe many people will make mistakes here about their skills or the sharpness of their knives. No, no, I will introduce it today so that everyone can easily make twice-cooked pork like a lamp shadow.

Tomato Sauce Salad Bread
The last time I made a sweet pumpkin meal bag, my mother didn’t like it very much. She said she wanted something salty, so I thought of this salty prepared bread: let the dough shape well and put ham slices on it, then spread tomato sauce on it, put mixed vegetable salad on it, and finally squeeze on tomato sauce to decorate it and put it in the oven. It was really beautiful and soft when it came out of the oven. My mother spoke highly of the bread this time. She said it was much more delicious than the sweet bread. The bread was super soft because I used homemade yogurt to knead the dough, coupled with the refrigerated fermentation and various mixed vegetables and sweet and sour tomato sauce on the bread. It’s no wonder that this bread is not delicious. Especially the older ones have to bring bread with them when they get up in the morning and ask for more ketchup!

【One-touch Cranberry Egg Toast】
Counting the days, I haven’t updated the bread for a long time. In busy days, I often choose one-click toast. There is no need to knead the dough or shape it. I just need to run to the kitchen occasionally to take a look and check the status. The resulting bread is equally soft and delicious, making it an essential breakfast staple.

Colorful Chiffon Cake Roll
Although Zaizai is ten years old, she still retains a strong sense of being a girl in her heart. She likes the color pink when she sees it. Every time she goes to the supermarket, she always goes to the bakery section to check it out. This cake roll with pink sugar beads is what I can’t forget the most, and I have long thought about trying it. However, when I went to supermarkets large and small, I couldn't find these little colorful candy beads, and I felt so disappointed. Suddenly I remembered, didn’t the bakery in this supermarket have colored sugar beads? I quickly asked the salesperson. They said you have to ask the baker. Although the master will not go to work until tomorrow, I can't help but be very happy, because after all, there is hope. Early the next morning, I ran to the bakery and found the master. The master said that he only had a little bit in stock and refused to sell it to me. He couldn't stand my kind words and talked about it, so he bought me a little bit. Haha, I was so happy. With just a little bit, I can realize my dream.

100% sourdough rye bread
There are many recipes for making rye bread, but few use 100% rye flour. Rye contains a special kind of gluten, but the content is very small (only 6%-8%). Therefore, it is difficult to form the structure of bread. It is difficult to make better bread without adding a large amount of high-gluten flour. There’s a lot of knowledge packed into sourdough rye bread. Rye flour is high in natural sugars and dextrins, as well as pentosan, which increases the strength and extensibility of the protein and can make the dough sticky if mixed for a long time, as you would for wheat bread. In addition, natural yeast starter can provide an acidic environment and slow down the speed of enzymes breaking down sugar during the mixing process. During fermentation, enzymes gradually release the sugars in the grains. If mixed and fermented, the bread will taste sweet and creamy, and the chew will be very different from other breads. It seems that I caught a glimpse of something wrong with my bread in this passage, but I don’t know if the cracks on the surface of the bread are normal, and I don’t have a picture to show it. This bread is best made with a variety of rye flours, from fine gluten-free rye flour to coarse rye and even cracked rye. This recipe uses a blend of grains and a suitable soaking solution to increase enzyme activity. There weren't that many kinds of rye flour, so I had to stick to the only rye flour I had on hand. What difference the results will make, only God knows. . . . Since the dough contains very little gluten, the crumb is very firm and doesn't have the large, irregular holes found in standard hearth-fired bread. It is indeed a very dense bread, and people who don’t like whole grains probably won’t like it too much. . . . .

Shredded hairtail and radish soup
Generally speaking, hairtail is usually braised or pan-fried, which is more commonly eaten. I remember one time, the two of us ate out together. We tried this dish on the recommendation of a friend. I have always been afraid of the fishy smell. I always thought that hairtail would wake up so much that I didn’t dare to try it. But when we both ate it that day, we both felt that not only was there no fishy smell, but it had a bit of hairtail smell. It added to the delicious taste, especially the person in our family said it was very delicious, so after returning home, I learned to make this dish. There were also several times when friends and relatives came over and tried it, and the feedback was good. Especially in winter, I made it spicier and it tasted more exciting...
